Southern-Style Mac and Cheese

Ingredients
- Medium pasta shells, 1 lbs.
- Colby Jack cheese, 8 oz. shredded
- Monterey Jack cheese, 8 oz. shredded
- Cheddar Cheese, 8 oz. shredded (Cabot New York Extra Sharp Cheddar)
- Butter, 4 tbs.
- Half and half, 2 cups
- Milk, 1 cup
- Sour cream, 1/2 cup
- Eggs, 2
Equipment
- Grater
- Large pot
- Colander
- 9x13 glass pan
Prep
- Grate cheese
Instructions

Preheat oven to 375F.

Bring large pot of water to boil. Cook pasta until 1 minute short of al dente.

While pasta is draining, melt butter in large pot.

Mix pasta in until coated with butter.

Beat eggs in small bowl.

Mix in: half and half, milk, sour cream, and eggs.

Mix in the Colby Jack and Monterey Jack cheeses.

Spread in pan.

Sprinkle with cheddar cheese.

Bake 40-50 minutes, until cheese is crispy.

Let rest 10-15 minutes before serving.
